(Easy and Quick Recipes for One)
- Bagged mixed lettuce or salad greens
- Any additions you like, such as
- Cubed/sliced bell pepper, tomato, cucumber, mushrooms etc.
- Leftover cooked meat, cubed or some lunch meat, cubed
- Cheese, shredded or cubed, or a good sprinkling of parmesan
- Croutons
- Your favorite salad dressing
- Butter or oil for frying eggs
- 1-2 eggs
- Salt & pepper
Just toss all the vegetables, meat, croutons and cheese into a bowl. Add some salad dressing. Heat butter or oil in a nonstick pan, gently crack eggs into pan, season with salt and pepper, and cook eggs until whites are solid and yolks are still runny. Or flip them over for eggs over easy. Or, if you’re impatient or mess up, just stir it all up and call it scrambled eggs. Place the cooked eggs on top of the salad.
